This plant-based recipe combines the marine freshness of organic seaweed from Brittany with the sun-kissed sweetness of southern vegetables. Royal kombu and wakame, harvested off the coast of Finistère, form a briny and crunchy base, balanced by black olives, semi-dried tomatoes, preserved lemons, and red onions.
The artichoke pieces add texture, while the whole dish offers a palette of flavors that are at once fresh, vegetal, and Mediterranean. A subtle blend of Breton terroir and southern influences.
This 100% plant-based tartare can be enjoyed simply as an appetizer, on toast, or as a condiment. It's an invitation to discover seaweed, naturally rich in fiber, vitamins, and minerals, in an accessible and delicious recipe.
