At Terroir, we have chosen transparency: to explain what we select, why, and in what context the products are made.

Artisanal and industrial: different realities

An industrial product is designed to be produced in large quantities, with a focus on standardization. Recipes are designed to be reproducible, quick to manufacture, and consistent over time.

An artisanal product, on the contrary, is based on:

  • more limited volumes,

  • a central human know-how,

  • a strong link with an origin or a method,

  • and an acceptance of natural variations.

These two models coexist, but they do not follow the same logic.

Craftsmanship is not a matter of size, but of approach

A workshop can be structured, equipped, and organized without being industrial.
What makes the difference is not the size of the company, but the way of producing.

At Terroir, we consider a product to remain artisanal when:

  • the raw material is identifiable and traceable,

  • the human touch plays a key role,

  • production respects the necessary time,

  • and taste takes precedence over cost optimization.

Can one be artisanal on a larger scale?

Yes, in some cases. Some family businesses have been producing for a long time, with larger volumes, while maintaining artisanal methods and high quality standards.

The important thing is to know how the product is made, and not just how much is produced.

That's why we analyze each establishment individually, without automatic judgment.

What we voluntarily exclude

At Terroir, we do not select:

  • ultra-processed products,

  • standardized recipes without identity,

  • anonymous productions without traceability,

  • products with vague or interchangeable origins.

Even if these products can be attractive in price, they do not correspond to our vision.

What we prioritize in our producers

We work with businesses that:

  • master their production chain,

  • know the origin of their raw materials,

  • stand by their choices, even when they are restrictive,

  • and seek to express an authentic taste.

Some products carry a label, others do not. The label is never an end in itself, but one benchmark among others.

How we select our partner producers

Our commitment to French craftsmanship is not based on general statements, but on a rigorous and well-defined selection method.

On-site visits

Before referencing a producer, we go directly to their workshop, cannery, or farm. These visits allow us to observe the manufacturing conditions, hygiene, adherence to recipes, and traditional gestures.
We want to see the hands at work, understand the entire process, and feel the real atmosphere of the place. This immersion is essential to build a relationship of trust and then tell the authentic story of each product.

Demanding tastings

A product only joins our catalog after thorough tasting. We look for the balance of flavors, the accuracy of textures, and that singularity which distinguishes an artisanal product from a standardized manufacture.
Each tasting is put into perspective with what already exists on the market, to ensure that the product brings real taste value.

Ethical and environmental criteria

Quality does not stop at taste. We also evaluate the producer's overall commitment: responsible practices, attention to packaging, respect for human labor, and the desire to preserve regional know-how.
These criteria are an integral part of our selection and directly influence our choices.

This approach explains why our catalog remains voluntarily limited. We prefer to offer a few hundred carefully chosen references rather than an extensive offer without distinction or coherence.
