Undeniably the star of French spices, Espelette pepper AOP (Ezpeletako biperra) has been cultivated in the Basque Country since the 17th century. From the Capsicum annuum family, it is today the only French spice to benefit from a Protected Designation of Origin.
Used exclusively in dried form, this pepper provides a mild, fruity and aromatic heat, perfectly balanced for everyday cooking.
Espelette pepper is distinguished by a rich aromatic palette, marked by notes of ripe red pepper and a moderate strength, between 1,500 and 2,500 units on the Scoville scale.
A subtle, never aggressive spiciness that enhances dishes without masking flavors: ideal for Western palates and lovers of fine spices.
Heir to ancestral know-how, Espelette pepper is cultivated in open fields, exclusively in its appellation area.
Harvesting is done by hand, from late summer until December 1st, when the peppers have fully enjoyed the Basque sun.
After harvesting, they are manually cleaned then matured on racks in greenhouses or on the facades of houses, before being dehydrated in an oven to reveal their full aromatic intensity.
