Caught in winter, when the mackerel is at its peak, the fillets are prepared fresh and then cooked in court-bouillon, respecting traditional methods. Trimmed and packed by hand, they are accompanied by a mixture of aromatics: lemon, carrot, onion, caper, and gherkin, which provides balance and freshness.
The marinade in Muscadet, a dry white AOC wine, enhances the delicate texture of the fish with its light, tangy notes. Tender and aromatic, these fillets offer a tasting experience that is both fresh and elegant.
