🌾 French mustard: Maison Fallot and the return of seeds grown in France

🌾 La moutarde française : Maison Fallot et le retour des graines cultivées en France

For a long time, French mustard was renowned worldwide for its taste and craftsmanship. Yet, behind this iconic product, a more complex reality has emerged over the years: the gradual disappearance of mustard seed cultivation in France.

Today, some houses are choosing to return to their roots. Among them, Maison Fallot plays a key role in reviving a French industry.

A detached house in the heart of Burgundy

Founded in the 19th century in Beaune, Maison Fallot is one of the last family-owned and independent mustard makers in France. It perpetuates artisanal production, faithful to traditional methods.

Here, mustard is not a standardized product. It is worked with precision, in small quantities, to preserve the texture, the aromatic intensity and the balance.

Mustard seed: a major issue

For decades, the majority of mustard seeds used in France came from abroad, particularly from Canada. This choice, dictated by economic reasons and volume, weakened the French mustard industry.

Dependence on imports has shown its limitations, particularly during recent climatic hazards, which have caused shortages and price increases.

The return of seeds grown in France

Faced with this situation, some stakeholders have decided to take action. Maison Fallot has been committed for several years to reviving the cultivation of French mustard seeds, in partnership with farmers, particularly in Burgundy.

This work requires time, support, and an adaptation of agricultural practices. Mustard is a demanding crop, sensitive to climatic conditions, but essential for restoring meaning to local production.

Why produce mustard from French seeds?

Using seeds grown in France allows you to:

- strengthen traceability,
- supporting local farmers,
- reduce dependence on imports,
- and restore territorial coherence to the product.

In terms of taste, these seeds also bring a finer and more authentic expression, directly linked to their terroir of origin.

Preserved artisanal know-how

Beyond the origin of the seeds, Maison Fallot distinguishes itself through its manufacturing methods. The seeds are ground using a stone mill, a slower technique that avoids overheating and preserves the aromas.

This artisanal approach allows us to obtain mustards with character, both powerful, balanced and faithful to the Burgundian tradition.

Mustard, a truly local product

Often considered a simple condiment, mustard is nevertheless a regional product in its own right. Its taste depends on the variety of seeds, their origin, the vinegar used, and the mustard maker's technique.

When produced with exacting standards and consistency, it becomes a true element of gastronomy.
