In the cider world, many set out to make a drink that is easy to drink. Cyprien Lireux pursues something else: ciders and perries that tell you about a place, a vintage and a story.
At his place, apple and pear are treated with the same rigour as a great grape. Time, terroir and nature dictate the decisions. Nothing is rushed, nothing standardised.
That approach is what won us over at Terroir.
Back to the land
Cyprien Lireux’s story begins a long way from the orchards.
In 2020, at just 24, with a business school degree in hand, he decided to leave a career that seemed already mapped out. One idea possessed him: going back to what had fascinated him since childhood, working the land.
Cider came almost naturally. He had always made it with his father and grandfather in the small family orchard. What had been a family tradition became a life’s project.

Gleaning to preserve a heritage
When Cyprien started out, he had no orchard of his own.
Rather than see that as a constraint, he chose an original path: gleaning.
Every autumn he walks the old standard orchards of the Pays d’Auge to gather apples from trees that are sometimes a century old. Orchards often left to themselves, but which hold an extraordinary diversity of local varieties.
That fruit helps preserve an exceptional orchard heritage while offering an aromatic richness that modern, more uniform plantings cannot match.
Every bottle becomes a living witness to an inheritance handed down the generations.
A philosophy guided by nature
In 2023 a new chapter opened with the purchase of a family farm, alongside his father.
There they are planting new standard apple and pear trees to build their own estate step by step, while continuing to gather fruit from the traditional orchards of the Pays de Falaise, the Pays d’Houlme and the pear trees of the Domfrontais.
Their philosophy is unchanged: let the fruit speak, respect the seasons, accept the differences between vintages, and produce less but produce right.
As Cyprien puts it himself, his work is set by “nature, terroir and tradition”, always with simplicity and without trying to do more than is needed.
Ciders thought of as wines
What sets Cyprien Lireux’s cuvées apart at once is the approach.
The fermentations are natural, the ageing patient, and every cuvée carries a vintage. Nothing is designed to mask the fruit or reproduce last year’s taste exactly.
On the contrary, each harvest has its own personality.
His ciders and perries offer fine bubbles, real freshness, tension and an aromatic depth that recall certain serious wines more than the industrial ciders many are used to.
That vision opens new possibilities at the table and shows that cider can express itself fully in a gastronomic setting.

Why we chose Cyprien Lireux
At Terroir we like producers who do things sincerely.
Cyprien Lireux isn’t following a trend. He is carrying a heritage forward, planting tomorrow’s orchards and bringing local, sometimes forgotten varieties back into the light.
His bottles tell a family story as much as a Normandy terroir.
They remind us that a great product is the result not only of skill, but of vision, patience and deep respect for nature.
That is exactly what we want to share through every bottle we select.
